I worked in a donut shop where 90% of the workers were latinas and I can confirm that the pan thing is true. In my country the date is for the seller not the consumer. They calculate that the seller will sell it and the buyer keeps it at the recommended temperature for one to two weeks and set the date accordingly. The only thing I don't risk a thing is meat. Milk and bread you'll see, smell and taste if it's gone bad.

It's hectic enough so no one's allowed in kitchen as I'm cooking, Yet they come in. I don't yell crazy at them but I say yell out nice everyone's full and I have a mess! My youngest says" I asked if you needed anything". I don't remember that. As I was in my cooking several dishes zone so it's all timed to be served hot. I do teach them how to cook cleanup we have certain mornings & nights so they all know how to cook and can do it when they're on their own. My oldest is on her own cooks great my youngest she cooks up a storm. I'm actually impressed as she's learning she's also teaching me Loasian foods. We have a very diverse family. I'm sure this video fits alot of families. Very funny video in my opinion.

That's how I always cook outside cooking classes. Experiment with seasoning and trust your sense of smell and taste! Make mistakes! Eventually you only need to sniff the spice or herb to tell you if it will go with the food.

The fermented/soured milk is pretty common where I grew up. We keep the milk in gourds when it starts to go bad and have a special stick for churning. Absolutely delicious.

I have white grandparents and a Mexican step mom who's been in my life since I was very young. My grandparents' thing was that whoever cooked didn't have to clean up, unless I was the one to cook then it was whoever cooked cleans up. When I started going with my step mom and my dad to make Tamales and stuff with my step aunt (who I later found out is actually my step grandma), it became a go sit in the living room and wait until we're done. Then don't touch the dirty dishes, we don't want you to break them.

My grandpa never measured when he cooked, it always ended up being spicy, strong, or too sweet, depending on what type of food. Some of my family wouldn't be able to eat his guisos or tucos bc of that but I always liked them. He died of cancer three days after my birthday and one of the things I instantly noticed while he was still here was that his food wasn't spicy or strong anymore, it broke my heart. I'm sorry if I'm ruining the mood but I just want to tell you that whenever you think "damn, (x family member) made this too spicy" and feel like not eating anymore, remember that this granddaughter misses that food a lot and maybe you will too. Enjoy it and appreciate it bc once they are gone, even while still alive, it burns more than that food you once found too spicy.
