Just give him the go signal and he will automatically fly up using his balloons. But there will be lots of obstacles like cactus monsters and spiky platforms. Interact with the objects first and keep them away from Amigo Pancho's path. You can also aim to get star ratings by trying to grab the stars in each level without popping Amigo Pancho's balloons.
