Technically Sith are a species and the term "Sith" refers to the former Jedi who were cast out of the Jed'ai Order for accessing the Dark Side of the Force. These "Sith" found Korriban and the native species, who referred to themselves as Sith, powerful in the Dark Side and set themselves up as "Lords of the Sith". Of course the native population rose in opposition to these invaders, but lost. Hard. And so millennia later the Sith species has been wiped out of existance due to lack of sustainable population and the fact that they could breed with other 'human-like' species.
