this beam-forming thing ... could this be inverted and used on, lets say, microphones ? and with some nifty delays in the received signals give some kind of 'directed listening' ?

It's possible. You can measure the time difference between the microphones when they detect something.

A beam array system is not very useful in collision avoidance ATC and TCAS will take care of the problem, but could be useful to fly above when possible or around a weather system. a standard mechanical radar placed in the front of any commercial plane will give the same information, now the question is it more cost efficient to use a phase array or mechanical radar in the radome in front of the plane. In military fighters where the space is limited and the cost is not, phase array is a clear winner.
