Phool Makhane Ki Kheer Recipe By Anasuya:
Ingredients:
2 Liters of Milk
1 Big Cup full of Phool Makhan (Fox Nuts or Lotus Seeds)
1 Cup of Sugar
Ghee
Cashews
Hazelnuts
Almonds
Elaichi Powder (Cardamom)
Procedure:
Heat Ghee in a Pan and Roast the Phool Makhane for few minutes till they turn crisp. Shift the roasted Phool Makhane onto a plate and keep it aside to cool. Once cooled down just give them a stir in the mixer careful not to make them into powder. Fry Cashews, Hazelnuts and sliced Almonds in the ghee till they turn light brown. Separately, make thin slices of Almond for garnishing and keep them aside. Pour 2 liters of milk into the pan, let it boil till half milk evaporates add Elaichi powder. Add Slightly ground roasted Phool Makhane, Sugar and roasted dry fruits to Milk and let it boil till thick. Take the cooked kheer into a bowl. Garnish with thin sliced almonds and serve.
