Yet another one of the precious few groups which re-create the music of Antiquity, Ensemble De Organographia is one of the earlier groups, releasing their first album in 1995. This album contains varied music, dating between 500 and 300 BCE.
Historical Note: Despite the fact this music is a reproduction of Greek creations, the Ancient Romans were notable for deriving nearly all of their music (especially in upper-class settings) from the Greeks. Therefore, this music was just as common in the Roman Republic/Empire as it was in Greece. In fact, at least two of the Musica Romana pieces are nearly identical to the songs produced by this group.

Yes, there are fragments of musical notation from Ancient Greece. Also, check out the Song of Seikilos, it's a complete song from the 1st century AD (and it's very beautiful).

How do they know this is what was played? Is there sheet music?

years ago before music notes and sheets were made, people had to learn by heart, that's why music travelled less and slower.

I think the notation was by letters and maybe some symbols as well as letters and the rhythm was by the long and short vowels giving rise to prosody for example the Dactylic hexameter (also known as "heroic hexameter" and "the meter of epic") is a form of meter or rhythmic scheme in poetry. However, I am not sure if the notation is something settled, I think these are more attempts of interpretation, albeit good ones.

As far as I recall reading, there is actually small fragments of surviving ancient greek musical notation, but scholars aren't able to understand it.
