I grew up in Miami fishing on the now gone Haulover Pier . Every summer parents would drop me off when going in to work and pick me up on the way home a few times a week. I used to catch 12-14" rainbow runners on yellow jigs throwing under the pier. Great tasting! Never heard anyone else even say the name until this video 35+ years later.

As a Brit who loves the Florida coast, I love watching your videos. One thing though. I was taught by a Sushi Chef that all "raw" fish should be frozen to ensure that it kills any potential parasites and bacteria. Ideally, you need to freeze it at -4° F for at least one week. On the other hand, if you’re in a hurry and want to eat sushi-grade fish in the safest possible manner, you can freeze it for about 15 hours at -31° F (but who has THAT type of freezer?). I have eaten raw mackerel, snapper and sea bass without freezing (before I knew the above) and not had a problem - but it may be worth the consideration. The other thing the sushi chef taught was that the wasabi generally used also helps kill off any nasties which could be lurking in there - and the pickled ginger is just a palate cleaner.
