Angu Pongsen is a Naga-style fish dish incorporating the essence of Nagaland's culinary tradition. This Naga delicacy is created by Chef Joel Basumatari during his sojourn at Honk, Pullman New Delhi Aerocity.
Ingredients:
Local small fish 500 gm
Green Chilli 7-10
Fiddlehead Fern 1 bunch
Crushed Garlic 50 gm
Fresh Bamboo Hollow 1
Banana Leaf 1
Method:
1. Clean fish, wash and drain properly.
2. Combine all the ingredients and place in the bamboo hollow.
3. Carefully seal opening of the bamboo with banana leaves.
4. Place bamboo over charcoal fire for 20 to 30 minutes till the aroma of roasted fish wafts through the air, rotate bamboo occasionally to ensure even cooking.
5. Cool the prepared dish and pour content onto a plate.
