The pilot is basically an early single chapter draft of a manga (or just it’s first chapter) to gage reader interest in a story and loads of elements can (and almost always do) change in the serialisation. Yuno literally had a different last name in it to the one that was later confirmed in the actual story. So no, Staria isn’t canonically Asta’s last name. Until we get one for him confirmed in the story (If we even do. Though I assume we probably will eventually) he has no canonical surname
