Wow! I didn't know they live in shallow waters. Growing up in the Philippines back in the 80's, we would have this as a special treat since they can be pricey and were quickly shipped to bigger cities were it was highly demanded. My dad would usually buy it straight from fishermen fresh. Cooked just like shrimp or crabs, with vinegar and chili as a condiment to enhance its already flavorful meat. Nothing fancy. Nowadays, I'll probably substitute it with garlic infused butter and lemon on the side. BAM! Pound for pound, when it comes to meat to shell ratio, nothing beats it. The flavor and texture is out of this world. So good! It makes me appreciate it more Every time I go to Costco and looked at the overpriced pack of lobster tails. Oh well!
