Thanks for the review. I received my Nano 2 days ago. So far I like it, a lot. Another benefit not directly annotated in this review, portability. I frequently travel and end up being designated "chef" at destination. I believe it will pack and travel easier than other models I have carted around.

I have never sous vide before but after watching your truly tantalizing videos I had to buy the Anova Nano. Bluetooth is a great feature too. I just finished unboxing it. I had to come to my favorite foodie channel and blab about it. Today Sept. 2020 Amazon sells it for $129 and so does my local Kohls for the same price. I used $50 in Kohls Cash to buy it so I saved a lot. I plan to test it out with salmon filets and some shrimp with corn on the cob and potato. Thanks for your review!

I got mine a few days ago and finally tried it last night. Comparing it with my existing Anova (Bluetooth). A few observations: 1. Because it is shorter and the position of the clip, in my Kitchen Aid tub I need MORE water than with my original Anova 2 to get above minimum. 2. it seemed to heat the water faster 3. It seems to have a lower minimum temperature. We tend to lower the temp to 115-117 after a cook but this machine wouldn't do it. Perhaps the water had dropped below minimum? I will try again next time. 4. I like the size and integrated clip. 5. The -/+ buttons are less convenient, slower to adjust than the wheel. 6. The new sounds are nice. I never found bluetooth reliable enough to be useful - the size of our house and my inability to sit still mean I am generally not close enough for Bluetooth to work. I have a thought of setting up a Raspberry Pi in my kitchen with an application to collect data from the Anova devices via Bluetooth. Maybe this fall or winter I'll play with that (I did a proof of concept a few months ago, I was able to connect and collect data from the Anova).

Probably cause the water isn't moving as well and therefore not as warm on the outer edges of the container.

It could also be that the control loop is tuned differently. Maybe the big brother backs off the heating sooner as it approaches target temp while the Nano puts out full power until just before it hits the target temp. It's hard to tell from the video... but based on the big brother being ahead until the 15:22 time / 134.4 deg mark (on a race to 135), that's my guess. Would like to know how it went from room temp to 110deg to get an approximation for the first order time constant of the system. That would tell you a lot as well.

Makes sense...like when I stop my Anova and the temp shoots up because it’s much warmer at the source...likely not as consistent across the entire container as the big brother is

+Burt Weed Yeah the algorithms that they use for the big one are carefull selected so as not to *over-shoot* the set temperature. So they are very fast at heating from cold to within a few degrees of target but then slow down (PWM) and take ages for the last degree. That's good thing - I see people saying that it's slow(er than the Joule) so it's not as good. They're wrong.

How easy is it to take apart and clean? I had a glass jar of egg bites break and leak and cleaning my Anova Bluetooth model wasn't horrible because the metal sleeve comes off and you can get to the impeller, heating rod, and sensor easily and scrub them with a toothbrush. Is the Nano similar or do you need other cleaning methods?

I was given the Anova AN500 as a gift in December 2020. It was used properly, but died this week. No power to the unit at all (the AN500 has no reset buttons). I emailed Anova for suggestions to power it up, and they asked for a receipt before they could simply the device. After tracking the receipt down and sending it to them, they replied explaining how my AN500 was three months over warranty, and while I "must be very disappointed in the performance of their product" (yes, they wrote that!) there was nothing they could or would do. If you choose an Anova sous-vide cooker, assume it's a disposable. Mine was used a dozen times before it died.

Another great video. Thank you. I see that there is now a new Anova (2019) Precision Cooker. The tech specs look the same, except for power: 750W (Nano) vs. 1000W (Anova 2019) 2019, which now also has an adjustable & detachable clamp. I'm guessing for those looking at the new unit, this video would give some good insight without having you do a whole new review.

I bought my Anova 6 months ago without WiFi. I use it a lot. I have never encountered a situation where I thought, “Darn, I wish I had gotten WiFi.” Not sure if the new one comes without WiFi but if it does, I would recommend the non-WiFi version.

Hi G. You took apart the little knob at the bottom, that;s great, but does the long cylinder come out as well, like with the "big brother"? Say you have a bag open up and the water gets messy, that contamination will seep of the opening. Can you get into it to clean it? Up to the element?

With the Mellow slowing inching down in price, would you be interested in doing a review on it? My wife ordered it for me when it was in development since I had gotten a 2nd gen Anova, with bluetooth, and was so enthusiastic about it. Since it only has about the same counter footprint as a loaf of bread we leave it out, and with it's ability to refrigerate prior to cooking I find that it's the one I use the most often. It does have some drawbacks, no physical controls, tends to start up by itself if left plugged in, manual mode freaks out if wireless connection to my phone is broken, sounds like a noisy aquarium, small tank (but double walled and with a lid for long cooks), and the high price.
