With this can you extract some information on the power generated by the turbine? or at least obtain the rotation speed? This way I could obtain the power from the velocity/power curve

I'll admit I'm not quite sure why that is important to do, but I've checked that if you skip that step the fluid on the interior zone won't move.

At 16:18 when defining dynamic mesh zones, how do we know which ones have to be what? I understand that if we select the whole domain then we dont need to add the interior faces but we do need to add the exterior. Also the stationary is for the interface exterior interior, which we didnt create as named selections. So what is that zone?

It is simple math. Basically the function works the following way: You wan´t the velocity of the wind to be 8 m/s, but to have a smooth ramping, you can just use tis function. The velocity starts at 0 and with increasing time, the velocity reaches the desired 8 m/s. You can write that on paper and place random values for the time variable. You can see, that at 0 seconds the velocity is 0 and at some high value, like 30 seconds, the value is 8 m/s.

Define maximum veleocity im turbine walls, then delete the maximum velocity to turbine radius. Then multiply this to 60 then you will get rpm.

save your cad file by clicking save as STEP214 format. open design modeller in ansys and find the STEP214 file and click generate
