I just finished this today for my birthday tomorrow! Without a cake ring, forgetting to out crumbs on the first layer, and also used a granny mixer 🤣 Arm fatigue is real.. 4 minutes is FOREVER. Also for a free formed acetate ring it's not looking bad. My acetate was only 4" tall so I used two pieces taped together. 🤷🏾♀️🥳🥳 My advice to anyone trying: Get a cake ring. That first layer was wooorrrkk without it 🥴

Tosi's book All About Cake is easy to follow and the recipes genious. I bought my wife the Birthday cake GF from Milk in LA. Then made my son a GF Mint Cookies and Cream. Both awesome and I'm a rookie baker. Good video.

That was pretty incredible. Even I haven't made this yet. Amazon would be a good place to buy hard to find ingredients. A piping bag would facilitate getting the frosting into place. I think that one interesting aspect of this cake is its size, being not very wide, but very tall.

You gotta try it, Todd! Atleast once. Amazon is exactly where I picked up the cake ring! Maybe I need to resort to there for other ingredients. Oh no....not piping bags...they terrify me

When most people think of piping bags, they have in mind the thick canvas reusable kind. You should just get some disposable plastic ones, Wilton is a common brand, on Amazon and at Walmart. You actually don't even need to use a tip; for this birthday cake, you just fill the bag, twist the top a bit so it doesn't come out there, cut off a bit of the other end, and then gently squeeze. Bags are nice for reaching into tight spaces, even when filling cupcake tins. For other projects (like frosting), you can graduate to some tips. Tips have a genius effect on the baker. You can do the simplest one, and everyone will think you are a genius.

The thing I’ve never understood is whether the cake is meant to be eaten frozen/semi-frozen or if that is simply the ‘setting’ stage. The Bon Appétit video shows Christina freezing it for 3hrs then cutting and eating straight away...?

Freeze to set into place, then when ready to eat you take it out and let it sit room temp for like 5 hours. Then it’s golden!

What’s funny is that I ended adding too much citric acid in the end. I wanted to get my money’s worth and I could really taste it in the end. The thing I’ve found with these Milk Bar recipes is that I can get away with not adding certain ingredients and I’ll never tell the difference. There’s so much of this and that added in these cakes, if you’re struggling with some of those difficult to find ingredients, maybe there is an easier substitute you can use. Obviously, that’s doesn’t go for all ingredients, but definitely some of those out there

I ordered the freeze dried corn for the corn powder on amazon that solved that. I also couldn’t find corn syrup so I have used glucose syrup or vice versa. I honestly think a recipe with this much going on, you would never know the difference!

Citric acid and baking soda are two very different chemicals! One is an acid and the other is a base. Citric acid is an organic compound with the chemical formula HOC(CO2H)(CH2CO2H)2. When dissolved in water, it’s pH is about 3.2. Baking soda, also known as sodium bicarbonate, is an alkali (or base) with the chemical formula NaHCO3. When dissolved in water, it has a pH of about 8.3.
