Doi Begun or Brinjal Curry in Yogurt is a very delicious Bengali Veg Recipe. It is very famous recipe for Brinjal lovers. Just watch this easy vegetarian recipe and must try at home.
Ingredients of Doi Begun or Dahi Baingan:
1. Begun/ Baigan / Brinjal / Eggplant (2 medium sizes).
2. Plain yogurt (1 cup).
3. Onion paste (2 medium sizes).
4. Ginger garlic paste (2 tsp).
5. Turmeric powder (1 tsp).
6. Cumin powder (1 tsp).
7. Garam masala powder (½ tsp).
8. Red chilli powder (1 tsp).
9. 1 Bay leaf.
10. Garam masala.
11. Salt (as per your taste).
12. Sugar (as per your taste).
13. Mustard oil.
Methods of How to cook Doi Begun:
1. Marinate the brinjal with ½ tsp turmeric powder, and ½ tsp salt.
2. Heat the pan and add mustard oil in it.
3. Fry the brinjal pcs very well. Keep a side.
4. Take 5 tbsp oil in pan. Add garam masala and 1 bay leaf. Fry for 10 sec.
5. Add onion paste. Fry it very well.
6. Add 2 tsp ginger garlic paste. Fry it for 1 min in high flame.
7. Add 1 tsp cumin powder, 1 tsp kashmiri red mirch, ½ tsp turmeric powder, ½ tsp salt, and ½ tsp sugar.
8. Add 2 tbsp water and cook for 2 min in high flame.
9. Add 1 cup plain yogurt. Cook for 30 sec in medium flame.
10. Add 1 cup water. When boiling add fried brinjal.
11. Cover it for 5 min in medium flame.
12. Now cook in high flame. Add ½ tsp garam masala powder. Mixed it.
13. Put off gas oven. Cover the lid for 5 min.
14. After 5 min serve hot Doi Begun with hot steamed rice, roti, paratha etc.
