Can I plug in a XLR cable into the mic input on the ONE from my guitar pre-amp? Potentially to record two instruments at once. Can that be done?

You can but I'm unsure if it drops into a single audio track

Specs state that it’s 2X2 so yes you should be able to. You could also potentially use two mics if you have an external preamp that can interface the other mic from an instrument level impedance to a mic level impedance. The gain structure is a likely little more complex but nothing a few sessions couldn’t solve.

I’m sure you’ve already explored or moved on from your question but I’d like to think it’s purely an impedance marching situation. I don’t own this device but given specs it’d be silly if there wasn’t a simple workaround.
