These cupcakes are so good!
If you also want to make these, I used the recipe below:
Apple Pie Filling:
4 Apples cored, peeled and cut into segments.
3 Tbsp water
2 Tbsp butter
3 tsp cinnamon
1/3 cup sugar
2 cups water
3 tsp lemon juice
1/2 cup raisins
1 Tbsp cornflour dissolved in 2 Tbsp water
Directions:
Core,peel and cut apples into segments.
Once cut place in lemon water.
In a pot over medium heat add in the butter and cinnamon powder.
Mix until the mixture is bubbling.
Add in the drained apples.
Mix to incorporate.
Add in the sugar and water.
Mix until the mixture is bubbling and the apples are soft.
Mix the cornflour and the water and pour into apple mixture.
Mix until the mixture thickens.
Remove from the heat.
Add in the raisins and set aside.
Vanilla Cupcakes:
1 1/2 cup flour
1 1/2 tsp baking powder
pinch of salt
113 g butter
1 cup sugar
2 eggs
3/4 cup milk
1 tsp vanilla essence
Directions:
Mix the flour, baking powder and salt.
Cream the butter and sugar until light and fluffy.
Add in the eggs one at a time and add in the vanilla.
Add in the dry ingredients in three batches and the milk in two batches. mix until smooth.
Spoon into cupcake cases and bake at 180 degrees celsius for 18-20 minutes.
Cut a rough circle out of the top of the cooled cupcakes.
Fill with apple pie filling.
Put the cake tops back on and top with buttercream
