Apple Roll Cake

Ingredients for Apple Stuff:
- 8 apples
- 1 glass of granulated sugar
- 1 teaspoon of cinnamon
- 1 tea glass of walnuts
Ingredients for the Cake:
- 3 eggs
- 1 glass of granulated sugar
- 1 tea glass of milk
- 1.5 cups of flour
- 1 vanilla bean
- 1 grain of baking powder
Preparation of:
Peel and grate 8 apples. Place the grated apples into a large pan. Add 1 glass of granulated sugar and cook over low heat until the water evaporates. After turning off the stove, pour 1 teaspoon of cinnamon and 1 tea glass of walnuts and mix. For the cake, beat 3 eggs and 1 glass of granulated sugar with a mixer until foamy. Add 1 tea glass of milk into it and whisk again. Add 1.5 cups of flour, 1 vanilla and 1 baking powder to the dough and mix. Pour and spread the cooled apple mixture onto the baking tray lined with baking paper. Pour the cake batter over it. Bake in a preheated oven at 170 degrees for 20 minutes. Spread wax paper on the apple roll cake that comes out of the oven and turn it upside down. The apple side should be on top. Wrap the apple roll cake while it is hot, starting from the long side, into a roll and leave it to cool. Cut the rested cake in half and place it on a serving plate. If you want, you can serve by pouring powdered sugar on top.

Looks great--love apple cake! Going to try this plant-based as I have a family history of Cancer so need to avoid the estrogen and possible BLV in dairy and the lead and choline in eggs. Thanks for sharing
