The blood oxygen sensor didn’t get FDA approved because the area it’s being used can give incorrect results. The sensor is not the issue it’s where it’s being placed.

The reason I purchased my Apple Watch 6 near the start of the COVID-19 pandemic was to track my oxygen levels on a daily basis. Also have a digital thermometer that I tracked my body temperature daily. Use the EKG every once and awhile just because I have it. Use my Apple Watch along with my Oura ring that I have had since it first came out to track my sleep at night. If I where going to purchase an Apple Watch today it would be the Apple Watch Ultra. Over the years I have owned watches that cost much more than this that would just keep the time, and date. My late father had a gold pocket watch with gold chain that also was very expensive.

Where the watch is placed isn’t an accurate place to get a temperature it can give wrong results due to this reason Apple require the algorithm but there’s so sort of issue with that but I believe that can be fixed with software but I’m not 100% sure.

I’ve had the possibility of comparing a medical oxygen meter in a hospital against my AW S7 and had similar results, no more than 1% percent difference in a few runs. So at least for me it’s pretty good!
