Ingredients Required:
For Mandi Masala:
Coriander Seeds - 2TBSP
Cumin seeds - 1TSP
Fennel Seeds - 1TSP
Cloves - 6-8
Cinnamon Stick - 1/2Inch
Black pepper Cons - 1TSP
Green cardamom - 6-8
Black Cardamom - 1
Nutmeg Powder - 1/2TSP
Ginger powder - 1/2TSP
Mace
Bayleaf
For Mutton marination:
Mutton with Bone - 1/2KG
Mandi Masala - 1TBSP [Prepared with above ingredients]
Salt - 1TSP
Turmeric powder - 1/2TSP
Red Chilli Powder - 1TSP
For Mutton Mandi Prepartion:
Oil - 2-3TBSP
Cinnamon Stick - 1/2Inch
Cloves - 4
Green Cardamom - 4
Black Cardamom - 1
Onion - 1 Finely Chopped
Green Chilli - 4-5 Finely chopped
Water - 1&1/2 Cup
Pressure Cook for 5 whistles.
To The Cooked Mutton Pieces - add 1TBSP Mandi Masala
Lemon Juice - 1/2TSP
Salt - 1/4TSP
oil - 1TSP
For Mandi Rice Cooking:
Water + Mutton Stock - 3Cups
Basmati / Long Grain Rice - 2Cups [Soaked for 30 min in water]
Salt - as per Taste
Mandi Masala - 1TSP
Charcoal
1TSP Ghee
Fried Cashews
Fried Almonds
Fried Raisins
