Araichi Vitta Sambar recipe by Chef Sunder in Tamil is also called Kalyana veetu sambar.
Even though we have sambar often in a week, The Sambar from marriage function is very special. So, what's special about that? That's what we are going to see today. Araichi vitta sambar. You may have heard of lunch sambar. We are mostly using sambar powder to make sambar usually. If you have some time and you want to make it special, You can make this Traditional Araichi vitta sambar I'm Chef Sunder, Welcome to recipecheckr. There are 24 ingredients for this Araichi vitta sambar. Please don't think this has too many ingredients, Nearly 35 years before, People made sambar in this way. But now we got our Sambar powder to make it easier.
Now I am dividing it into 3 stages So that you don't feel its complexity.
When you plan the process, you can do it easily.
Here are the ingredients for the Araichi Vitta Sambar.
Ingredients Qty
Toor dal 200 gm
Shallots 40 gm
Onion 2 medium
Tomato 2 medium
Turmeric powder 1/4 tsp
Chilli powder 1 tsp
Salt to taste
Curry leaf few
Drumstick 1 no
Brinjal 4 no
Tamarind lemon size
Refined oil 4 tbs
Mustard seeds 1/2 tsp
Ground masala
Coriander seeds 1 tsp
Dry chilli 3 no
Turmeric powder 1/4 tsp
Fenugreek seeds 1/4 tsp
Ghee 1 tsp
Channa dal 1 tbs
peppercorn 12 no
Dry round chilli 3 nos
Garlic 7-8 cloves
Asafoetida 1/2 tsp
Coconut 4 tbsp
Fenugreek Seeds 2 tsp

Yes, but it takes lot of care and perfect quatity as larger qualtity and overfrying will give bitterness in taste.

Kerala people majority including me make this type of sambar only, but we add more coconut, rest all same. Podi sambar no one prefer to make. We make more than 250 days in an year Sambar. Cooker type cooking is good

Either drum or anion should be only choice.Drumstick need asafoetida where as VenGayam doesn't need PerunGsyam
