This Arancini rice balls Cooked in oil recipe is easy to follow with game changing secrets listed below so you can personalize the taste you love to enjoy. We call these aranchi balls not arancini balls when we go out and we love them cooked in oil the best. My mum calls them spinach patties not cooked arancini balls and its her recipe fried in oil I've modified today that's over 50 years old. Don't tell mum but I think mines better (hahaha but its a passed on recipe I love to cook)
Having 4 large teenage boys I usually make 2kg of arancini rice balls to ensure we get a good feed at home for two meals. ( the boys will eat 6 of these each and come back for more and eat them cold later on ). Its a little time consuming but it's also rewarding and makes you're home smell like an Italian restaurant. We have used normal spinach to make arancini delights but in this video the spinach used is an English variety that's home grown in our greenhouse.

Recipe Below:
4 cups rice washed in cold water until water runs clear ( anywise will do )
6 cups chicken stock or water infused with chicken stock powder ( add stock to your taste )
4 peeled tomatoes or 1 can of diced tomatoes
1 bunch of spinach roughly chopped with stems removed
4 cloves og crushed garlic or 1 tablespoon of minced garlic ( you can improvise )
500g of cheese ( your favourite type is best we love tasty )
Mozzarella cubes inserted into the balls approx half inch cubes.....if you like extra cheese.
4 eggs to roll the arancini balls in for the breadcrumbs to stick too.
Chorizo or bacon if you want to add a little meat to the dish
1 Packet bread crumbs
Vegetable oil, canola oil, bran oil all work as they have a high smoke point. We deep fried all arancini balls in approx 1.5L of oil.

You can add either garlic salt, onion salt or paprika to the breadcrumb to adjust the flavour to suit.
Siracha sauce, cholula sauce or tabasco sauce can be mixed in with the eggs to add more spice to the arancini ball.
To guarantee your fried oil is at the correct temperature and to cook meats to perfection spend a little to save a lot. Fying oil should be heated to 350F before adding the arrancini rice balls or else they will just stew in the oil and not cook crispy.
