We call it Patra in Gujarat and traditionally they are not deep fried but sauted in oil with mustard seeds, sesame seeds and fresh coconut on top.

Lovely. In my country we call this patha. Generally made with alot of tomatoes and sour things so when you eat it, it doesnt hurt your throat. Thanks for sharing. Love from South Africa.

Actually the wild variety of these leaves cause pain in throat. Try the domestic leaves, then it won't cause any problem if u make simply too

Grandma cooks all the old recipes, we call them arvi k pattay k pakoray and add imli ka pani and ajwain in the besan. My mouth started watering looking at this. Lots of love for granny

Add lil rice flower to make it cripy, coconut+onion+jeera+few cloves of garlic paste,coriander leaves, instead of amchur powder add tamrind and jaggery... Yummy .. sweet and sour!!

Nice recipe... Nvr seen this recipe before. Maybe a filter tray will be good for deep frying items... To place e fried item after u remove frim oil in a big bowl with holes to drip off excess oil before serving.

Be sure to add a generous amount of sour element to it. Traditionally for this recipe a tamarind paste is applied to the leaf before the chickpea paste. Without the tamarind (here they have added aamchur to the mix) the leaves can cause severe itching and discomfort in the throat. Sometimes even handling the leaves after washing can cause an itch if the leaves are not dried before chopping. Here he’s wearing gloves. With due care the end product is delish.

Didn't knew this leaves also is a food,in my area these leaves are very common ,it reminds me of my school days in monsoon I used to use this as my umbrella Btw I don't know it's original name but we locals call it (manne ko patta) Will definitely show this to my mom and will try this recipee
