Arbi (Taro Root) Curry is a rich and flavorful dish that brings together the earthy taste of taro root with a blend of aromatic spices. This curry is a delightful combination of crispy fried Arbi and a thick, spiced gravy made from freshly ground masalas, onions, and tomatoes. The dish is cooked slowly to allow the flavors to meld perfectly, resulting in a creamy and tangy curry with a hint of warmth from the spices. Garnished with fresh coriander, this comforting dish pairs wonderfully with steamed rice, roti, or naan, making it a perfect meal for any occasion.
Arbi (Taro Root) Curry Recipe
Ingredients:
500 grams Arbi (Taro Root), peeled and soaked in salted water
1 medium onion, finely chopped
2 large tomatoes, finely chopped
1 cinnamon stick
1 bay leaf
1 teaspoon turmeric powder
1 teaspoon chili powder
Salt to taste
Oil for frying and cooking
Fresh coriander for garnish
Spice Mix Ingredients:
15-20 grams yellow mustard seeds
15-20 grams coriander seeds
10-12 grams cumin seeds
10-15 black peppercorns
1 black cardamom
5-6 cloves
Dried red chilies (to taste)
4-5 green cardamoms
1 clove of garlic, peeled
1 small piece of ginger
Water (for grinding)
Instructions:
1. Start by peeling 500 grams of Arbi (Taro Root) and soaking them in salted water for a while. After soaking, boil the Arbi in hot water until they are about 70% cooked. Once boiled, drain the Arbi and mix them with a little turmeric, chili powder, salt, and oil.
2. Heat oil in a pan and fry the Arbi pieces until they turn golden brown. Once fried, set the Arbi aside.
3. In the same pan with the remaining oil, add one finely chopped medium-sized onion along with a cinnamon stick and a bay leaf. Sauté the onion until it turns golden brown.
4. Add a teaspoon of turmeric powder to the onions and continue to sauté. Then, add the ground spice mix (details below) and cook until the spices release their aroma and the mixture becomes dry.
5. Add water as needed and two finely chopped large tomatoes. Stir well, cover the pan, and let the mixture simmer for 5-6 minutes, allowing the ingredients to blend and the curry to thicken.
6. Once the curry reaches your desired consistency, add the fried Arbi to the pan. Stir gently to coat the Arbi with the curry. Cover the pan and let it cook on low heat for another 4-5 minutes.
7. Before serving, garnish the Arbi curry with freshly chopped coriander leaves. Your flavorful Arbi Curry is now ready to be served with rice or roti.
