In my view it's a ritual. I've seen so many and I honestly look for things to criticize. Usually i can't find anything. In this instance he should point out that pork belly and bacon are the same except that when bacon is cooked most of the fat is melted off. Pork belly is not rendered as much.

pork belly is not really an American thing. we really only a seasoning meat. small pieces in bean dishes and greens.. not meant for sandwiches.
