I'm on the fence about getting one of these because I'm worried about the cut quality and accuracy. What kind of tolerances can you expect with it?

Tolerances are pretty decent at this point. Most of the time parts are either dead on or within 0.2mm at the worst. Like anything it depends on how diligent you are with your setup and calibration. Once you have stuff set, it's pretty quick and easy to have decent quality and repeatable parts.

What thickness material are you using and what speed? I just made my first cuts today with mine on 1/4” material and I didn’t touch any machine settings other than slightly tweaking the z axis calibration. My cuts are very smooth right out of the box.

If it works, it works and that's what you should run. I use these settings on all materials. Previous to arriving at those numbers there were wobbles in the cut and inconsistency around corners or sharp curves.

I'm trying to cut a 2 inch circle and it's making the circle 1/7/8

I'd check the kerf width is correct first. And be sure you're cutting on the correct side depending on which dimension you need to be 2 inch. (ie. If you need a round piece of steel that's 2 in, that should be an outside cut. As opposed to a 2 inch hole which would be an inside cut. If you do an inside cut expecting a 2inch round piece, it would be under sized.) Hope that helps.
