Can that be done with a midi controller?

The video looks great but how are you controlling all the servers, I looked in the user guide for information on controlling multiple servers and didnt find anything. Care to share how you did it?

You have to assign the faders to a DMX channel. They are all networked via CAT5 to a network switch.
