I loved when Brishti mentioned that baharat is similar to garam masala. As an outsider to both of the cultures in this video, I thought that was really neat, and I never would have had any idea. The little moments where we find similarities across cultures are so cool.

@@rho992the spice mix they talked about is called बहारत not भारत. The word comes from बहार, the Farsi word for spice (or spring). This is a classic case of what linguists call false-friends.

The seed supposed to be used is actually khus khus, which are white poppy seeds. They have a similar nutty flavour when soaked and ground but still not the same. Black poppy seeds are not commonly used in Indian cooking.

For potato poshto (poppy seeds) white poppy seeds is used. And no tempering as it subdues the taste of the poppy seed paste. No turmeric is added as well. Only poppy seed paste, salt, sugar (a pinch which is optional) & green chilli if someone wants heat. It is a very simple preparation & along with potatoes it is made of many other vegetables as well. This is how I have always seen it made. Black poppy seed is used most in North East India or parts of western India.

@@xzx255 yes, I have seen. Since I am originally from that district. So I have seen my relatives using turmeric in our ancestral home. I have tasted both ways. However, we didn’t in our house & so my personal preference is without turmeric.

Trying both Armenian and Indian Potatoes, love potatoes, here in Mexico we have Enchiladas Queretanas which are tortillas dipped in a guajillo chili sauce, fried and then filled with cooked, diced potato and carrot, rolled up and garnished with fresh chopped white onion, cream and fresh cheese crumbles but I eat them withouit the cream and cheese, and the Armenian potatoes, I'll veganize it with imitation ground beef made with walnuts.😋👍

Allegedly the spice is called Baharat because it comes from India which is also called Bharat. Garam Masala is one of most prominent spice mixes that gave rise to the OG curry powder among other spice mixes. No wonder Baharat takes after it.

That's not true. It's origins can be traced to the word Bahar, a Persian word for spice. The make up Baharat and garam masala are almost same. Same ingredients, different ratios and preparation techniques. There are other similar spice mixes all over Middle East and Eastern Europe. Iraq, Iran, Turkey, Turkmenistan, Albania etc

Whenever I come across such comments, as an Indian my lie-detecting antennae activate - somehow... 😅 P.S. Baharat literally means “flowers and seeds” and loosely translates to “herbs and spices” in the Arab world. "Zero" connection with the word "Bharat". Also, it just can't be because India wasn't called "Bharat" back in the day... It was mainly recognised through the "Sind" region due to the existence of the Harappa civilisation thousands of years ago.

@@dhruvbarua123 Spices were brought into these countries from ancient India/Bharat. When European countries were looking for spices they did not go to Turkey or Persia but came to India. The Arab/Middle Eastern merchants travelled all the way to ancient India to buy these spices.

@@dhruvbarua123 Black Pepper, Cardamom, Cinnamon, Turmeric, Ginger are all originated in India. Also for many thousands of years Indians have been using different spices and herbs for cooking and for medicinal uses. The Indian medicinal system called Ayurveda uses many spices and herbs to make medicines. There are also ancient manuals for cooking, like Bhojana Kothoohala, that tells about the benefits of spices and herbs. Arabs and the middle East imported spices from ancient India and some from the far East. Mostly they all learned to use spices from ancient India. There were many ancient universities like Nalanda, Taxashila and Nagarjuna where Ayurveda, Buddhism, Vedic literature and many other subjects were taught, students from all over the world went there to study. India's Buddism was spread all over the world, mainly in central Asia, Greece, Far East and China. Through silk route China also influenced the world inturn China was influenced by India. These also took India's influence to the other parts of the world. Black pepper was found on Egyptian mummy also. India is known as the land of spices. Kerala in india is known as the spice capital of the world. Kerala has been trading with Romans, Egypt, Greeks and Arabs since very ancient times.

I'm a Bengali, and it's truly almost impossible to imagine a full Bengali meal without potatoes. And to think that potatoes aren't even indigenous to India. I don't really know when this Indian love affair with potatoes started, but now they are ubiquitous. Oh! and btw, aloo posto is a personal favorite.

The first potato dish is something I would like to try. The second dish has poppy seeds, and due to my job, I stay away from anything containing poppy seeds. I drive bus and subject to random drug tests, and poppy seeds can cause a positive drug test for illegal substances.

My favorite potato dish is Poutine and not fancy; just the fries, cheese curds and gravy. I had it when I visited Canada and fell in love. I live in Arizona, USA. We don't have Poutine here but at least I can make it myself. I kind of Frankenstein it by baking the thick cut fries, putting on cheese curds and then pouring hot KFC gravy over it. Very good.

I do think many of ye would be surprised at the increased versatility & nute profile of chuño (freeze-dried potatoes) & other freeze-dried tubers can be a likened to those of fresh potatoes & devices products of them, kinda like how one would be surprised at that of hominy/mote likened to that of fresh or dried corn

Fresh poppy seeds should taste pleasantly sweet and a little nutty. When they have gone bad, they will have a harsh, bitter taste.

Incidentally, there is a long history of Armenians settling in India, and most of them in Calcutta, the capital of Bengal whence the Bengalis originate. Many Armenian churches are still in use there. It makes this a curious pairing.

Black Poppy seeds?!!? I never heard of it before but You missed the taste guys try the white poppy seed paste and the trick is soak the seeds for 20 minutes in luke warm water add a bit of salt and a green chilli, then grind it into smooth paste, it's ready to be used,by the way while frying potatoes you can add small portion of chopped onions once the potatoes as well as the onions are fried add the paste, a little water, boil simmer and reduce the gravy based on your preference that's it😊

The Sini Patates recipe was a dud for me. If I make this again I’d chop the onion that are part of the layer and caramelize them. I sautéed the onion in the ground beef mixture. And glad I did. I’d have also cooked the sliced potatoes in milk until tender. Then drain and layer on top. I’ll try the other potato recipe. I’ve made a similar dish minus the poppy seeds.

They're very common in Bengali Indian food as well as in the rest of eastern India. You can add the poppy seed paste to chicken curry too!

Oh.. India has this style of cuisine fro the west coast where they use poppy and make very spicy (tasty as eff) dishes.. poppy seeds and coconut toasted.. you can search for chicken kolhapuri to see what it looks like! It looks spicy
