Sometimes this is called a “queso flameado” but queso flameado is usually lit on fire with a shot of tequila - we’re not doing that today. We’re making a simple choriqueso the way we used to experience it here in
South Texas on the border. Sometimes this is made with rajas, sometimes with mushrooms or other chile pepper and onion toppings, but today we’re keeping it simple.
A lot of my barbecue passion and experience came from my father and grandfather, but the choriqueso and cabrito experience came from my father in law - Frank Nieto!
Today we’re cooking over the fire on the ProPit RPG Grill but you can cook this on the stove top or in the oven, whatever works best for you. All you need for this recipe is two packages of Chorizo de San Manuel, our favorite chorizo, and two packs of queso oaxaca.
This recipe is so, so easy to make. All we have to do is cook the chorizo in the pan, add the grated cheese, and then pull yourself a big ol delicious choriqueso taco. You can top this with your favorite salsa, guacamole, or anything else you like. Let’s fire it up and cook some choriqueso!

That's funny, I wanted to make pizza bread and all I found in the fridge was mexican cheese, I put some marinara sauce down on some bread and used the mexican cheese broken up with a fork until fluffy and topped it, in the toaster oven melted and crisped up great and tasted good, I was surprised ! Its funny you mentioned it, "One bite, everyone knows the rules" ! 🍕

This is exactly what our favorite local Mexican restaurant serves with tortilla chips! It’s kind of buried in the menu, but my husband discovered it and we LOVE it! Sometimes we get takeout and just order 2 of these appetizers for our dinner. 😋 I had no idea it could be made so easily at home!

Today on Easter I was tasked to make a dish for my in-laws (all of their family) for the first time today on Easter. I am a pretty good home cook, but I felt tremendous pressure to make and deliver something delicious on a day that was really special for them. Not only we’re the regular family members from Washington going to be there,but family from California were flying in as well. To say that I had no idea what to make and that I wasn’t stressing it would be a lie. Then I came across this video yesterday morning and it inspired me to make a dish my Tio used to make for me when we would go and visit him in Monterrey: Queso Flameado! Wifey’s family is from Oaxaca so they had never had the dish before. I asked my mom a huge favor and she made some of her famous Tortillas de Harina and in conjunction with the Queso Flameado . It was a huge hit with everyone (with that said I would have to say it’s mostly because of her tortillas which are to die for.) My father in law was pretty drunk after we had ate and said that after trying the tortillas and QF I was now his new favorite in-law lol. Thank you for inspiring home cooks like us everywhere Arnie. Your generous sharing of knowledge, the confidence you give us with your wise words, and the obvious humility and kindness you come across with make us all better cooks and in turn people that bring our families together to make memories. I grew up in Oklahoma and Texas and now I live in Southeast Asia. While I love my new home, oh how I miss good Mexican and TexMex food and so I come to watch your videos whenever I feel a little homesick. Keep up the great work, Arnie!

I Grew up in Monterrey, Mexico. This was my favorite dish at the cabrito restaurants and I used to finished it all...by the time the cabrito got to the table I was already stuffed😄 Love your videos! Thank you.

This video took me back. I haven’t seen Chile Pequin in so long. My mom used to have a Chile pequin plant outside and make fresh salsa using them. That’s where I developed my love of spicy food. Thanks for the nostalgia!

The best My mom is from Linares NL And she only uses puiquin or del Monte Wild Chile puiquin there's a season where you go to the mountains and pick it the make in escabeche and in salsas or just Chile whit some eggs the best 👌

I’ve been making Korean corn cheese for my in-laws for years and it slowly evolved to incorporate queso Oaxaca and chorizo. They’re from Del Rio, so now I understand where that suggestion came from.😂

Born and raised in Del Rio i remember the first time I tried this was at la posta in acuna it's delicious and growing up my mom made her own hot pepper sauce from the huge chili pequene bush in our back yard.❤

I'm glad I'm not the only one that had that same feeling! This guy is a natural presenter/entertainer. By the end of the video I was thinking to myself "damn, I wish I could just sit in his backyard with him and have a couple beers and tacos and just talk about life". @@libertybelllocks7476fundido means melted. In Mexico we call this dish queso fundido or melted cheese. It can be plain, with chorizo, mushrooms. Apparently in the US Mexican Americans call it choriqueso

I made this years ago using the stove and oven to melt the cheese. I liked it but the chorizo is very oily. I thought I had made a mistake and not poured the oil off but realized that the recipe never said to do so. So I guess I made it correctly. I cut my corn tortillas into wedges, brushed them with a bit of oil and baked them to make chips. I'm glad that I found this video because I had been getting the urge to make this again for some time.

My favorite thing about chorizo is that seasoning is basically optional. It already tastes so good without anything. Definitely makes for a tasty easy dinner. I will definitely be trying this recipe tonight with some store bought salsa

Been lookin for this Recipe since I moved outta Santa Barbara in the 70's. Our Neighbors used to throw some Killer Pinatas Birthday parties and bring Choriqueso Taco's and homemade Tamales by from time to time because they were Awesum Neighbors. Saving this Recipe ! Can't wait to try it ! 👍

I absolutely love queso flameado. I work at a very large bar in Texas that has a rotation of food trucks, one of them makes queso flameado. every time I'm in the break room people are wondering what I'm eating, and it wins them over every single time. Top notch dish!

I made this tonight for my three adult stepchildren, being the first time I've seen all of them together for the first time in 15 years. They loved it! I did add a shot of tequila to the chorizo, but I didn't trust myself enough to light it on fire, as this was my first time making it. This was a simple, delicious dish to make. Thank you for this!

​@austindavis2406 the alcohol is still evaporating without the fire (alcohol evaporates around 78C, well below water). The flames just look cool and can be used as an indicator for how much is left but is completely unnecessary

Growing up in Houston my family ordered this at restaurants all the time. It was always Queso flameado on the menu but I never saw flames or tequila 😂. Looking forward to trying this and feeling like a kid again

One of my favorites. I've heard it called Queso Flameado, Queso Fundido con Chorizo, and now Choriqueso. Whatever the name, it's amazing!

Thank you for this video, probably the best choriqueso tutorial available. Growing up in Laredo, choriqueso was always my family’s go-to appetizer when we went out. Anyone here remember an old restaurant by the mall, La Palapa? Delicious!

I had some of the best cabrito in Matamoros back in the 80's. I don't think I've ever had better goat/sheep ever in any form. I love what Arnie cooks, look forward to more of his dishes.

Hello Arnie, this dish looks delicious! I believe we don't have that chorizo you used in your recipe. But what I do have in my freezer is homemade chorizo that I made. Hopefully when I make this dish it will turn out as good as yours look!

Cuando guardas en la heladera cualquiera en el verano húmedo, el sabor cambia bastante... Pero esta receta es perfecta, el queso derretido es una joya absoluta, lo haré en la cocina a fuego medio bajo hoy para el almuerzo de mi hijo mañana ❤❤❤

I’m all about Ernie that is absolutely beautiful. I had a Mexican friend of mine that told me are you sure you’re not Mexican and I was like I think I am.😂 I made chorizo eggs with a little bit of cheese some fresh queso❤ he loved it. He was a good friend.
