17:53 I learned to make Baked Alaska in Home Economics class, over 50 years ago. First you use sugar and egg whites to make meringue, beating it until it's extremely stiff - you want it to hold its shape. Get a slice of unfrosted sheet cake and put a slab of ice cream on top; the ice cream should be slightly smaller than the slice of cake, so you can see cake all around the edge. Cover the sheet cake and ice cream with a thick layer of meringue, making sure to cover the ice cream thoroughly all around the edges, sealing it off where it meets the cake. Put it in the broiler just long enough for the meringue to start getting brown. Serve immediately. The meringue and cake insulate the ice cream, so it doesn't melt, but the meringue cooks just enough. Part of the pleasure is the contrast between hot meringue and cold ice cream. Not hard to make (with proper preparation), but the results are spectacular; it's a very good way to impress guests.

@margretrosenberg42015 күн бұрын
@@DeeperDownTheRabbitHole The only problem is that it's last minute. You have to serve it immediately after cooking it. So if you're having a dinner party, say, someone has to leave the table and go to the kitchen, assemble the baked Alaska slices, add meringue, bake them, and then serve the dessert. Parts of it can be done in advance; you can slice the cake, slab the ice cream and store it in the freezer, maybe even make the meringue in advance (though I'm less certain about that), but final assembly and baking must be done just before serving. Of course, if you can afford to have your parties catered this isn't a problem, but that doesn't describe most people. And unfortunately, it doesn't work with a proper birthday cake, with frosting and candles, which is what children expect at a birthday party.

All of her friends back home LOVED them. Don't knock it 'til you try it! S'mores are a fantastic outdoor treat. They taste great, but a big part of why they're so good is the ritual of toasting the marshmallow over an open fire outdoor, which many (maybe most) Americans have amazing childhood memories of doing on a beautiful summer night. They really aren't the same if you try to have them inside.

If you are camping in the woods, s’mores are almost a necessity. If you don’t have a stick to roast your marshmallows on, just yoink one off a tree. The trick is to keep it from catching on fire or melting so much that it falls off the stick and into the fire.
@CLKagmi233 ай бұрын
The secret of marshmallows is that they are bought and sold in the U.S. almost exclusively to use as an ingredient in baking. They are almost never eaten straight but rather used as a baking ingredient that supplies both sweetness and binding effect to stick other ingredients together. The toasting of the marshmallow is key to the s'more, and I'm willing to guess the reason why *most* of all marshmallows in America are bought and sold. When toasted, the interior of the marshmallow becomes hot and soft and gooey while the outside becomes crispy and takes on a caramelized sugar flavor. The ideal is to make these outside around a campfire because toasting the marshmallow over wood smoke specifically adds a woodsmoked flavor that cannot really be replicated in any other way. So that is why s'mores are on the list!

Part of the charm of s'mores is that preparing one for yourself over the campfire can be tricky. You need to toast the marshmallow's surface and melt the inside, enough so the heat will melt the chocolate when you assemble the s'more, but *without* getting your skewer too close to the flame and setting the marshmallow's surface on fire. Do it just right, and you feel like you've accomplished something. So there's two kinds of satisfaction in one: a demonstration of skill *and* a tasty treat!

Yeah, marshmallows on their own are like, ok at best, but trust me when I say that S'mores are amazing. Toasted marshmallows taste completely diferent than regular marshmallows because the sugar in them starts to caramelize, the the soft texter adds just the right amount of ooey-gooey goodness that just pops in your mouth with the delicious graham crackers that act sort of like a pie crust in terms of it's addition to the flavor and texture, and the chocolate is the cherry on top for just a bit more variety in the flavor. Trust me, if you ever get the chance, try a s'more with a marshmallow roasted to a perfect golden-brown over an open flame. You won't regret it. Rice Krispies are a similar story, marshmallows are only ok on their own, but we Americans have found a few things they go great with.
@browniewin41213 ай бұрын
S'mores are delicious, but they have not been the same since Hersheys changed the shape of their chocolate bars. It use to be thinner and divided in little squares, 4 of which fit perfectly on half a graham cracker, it made for the perfect ratio of the 3 items with the American size and shape of marshmallow. Also it's important to toast the marshmallow slowly and gently so as not to scorch but become completely hot and liquid inside and will then melt the chocolate when placed on top.

You take it over and put it on a graham cracker with part of a Hershey milk chocolate bar on it. Smear the marshmallow onto it and top with another graham cracker. We also ate the soft charred marshmallow all by itself. Cheese cake is made with Philadelphia Cream Cheese that is not available in Europe, I think. My favorite pudding is Tapioca.
