ASH GOURD/KUWALO BAFATH/KARI KUMBALA STEW
Mangalorean & Udupi side in our marriage functions, this Ash Gourd Bafath/Stew is a must special item prepared & served on Roce applying day. Before marriage ceremony, we have Roce applying ceremony in Bride & Groom's house.
This Ash Gourd Bafath is our Traditionally prepared on that day. We can feel that aroma in all over the house & all the surroundings, everyone enjoys on that day alongwith several other dishes.
●Ingredients:
* 1 Ash Gourd 1&1/2kg -to 2kg
Remove skin clean it, cut into
little thick cubes.
* 1 Coconut grated &
extract 1cup milk of Thick &
2cups of Thin milk
* 3 Nos. Onion chopped little
thick in size
* 12-15 Garlic Cloves
* 2" Ginger julienne
* 4-5 Slitted Green Chillies
* 4-5 Bay leaves
* 8-10 Peppercorns
* 1Tbsp Coriander powder
* 1 tsp Cumin powder
* 1 tsp Garam Masala
* 1 tsp Turmeric powder
* 1 tsp crushed Pepper powder
* 1" of 2 Pcs of Cinnamon
Sticks
* 6-8 Cloves
* Salt to taste
●Other ingredients:
* 1tsp Sugar
* 1tbsp Vinegar
* 1-2tbsp Coconut oil
* 1 finely chopped Onions
●Method:
1. Take a broad deep Vessel Or Pan put ready Pumpkin, add thin Roce & above all cuttings of Onions, Ginger, Garlic, Green chillies, Bay leaves & all Masalas alongwith Salt mix it all well, keep it to boil for 10mins till it cook.
2. Ash Gourd is almost cooked. Now add 1tsp sugar & Vinegar (to give extra taste) boil it slightly.
3. Add thick Roce & adjust the curry & keep it on medium thick consistency, check the salt & masalas, cook it for more 2-3mins Ash Gourd Bafath is ready.
4. For Tempering/Tadka. Take a Pan add 1-2tbsp Coconut Oil & fry Onions till it turn slight brown colour, add it in ready curry. Kuwalo Bapath is ready to serve.
5. Eat it with Dosas, Roti, Rice, Appam, Panpolay, Nans or Chapathi. It's Very Tasty & Yummy just try it & enjoy guys.
Tips: If need you can add more masala powder or Pepper powder depend upon your spice taste
2. Remember to add always Bay leaves liitle Sugar & Little white Vinegar for extra taste.
3. Cut thick pieces of Ash Gourd & Onions, while cooking it'll will shrink in the curry.
4. Always use fresh Coconut milk in it.
