For English-speakers this difference between formal and informal speech can be strange, but in many language there are different conjugations of a verb therefore we can differ accordingly. It is the same in my native language, Hungarian. You should use the formal speech if you are adult and speaking with an older person then you, person with high position. As a child you should use formal speech with a teacher, any adult out of your family. If you dont use you being consider as you dont show respect.

I’m a bit more confused now. If I speak to someone in informal Greek and I shouldn’t have, would I be seen as rude?

Unfortunately yes if the person you speak is way older than you its rude and no matter how rude as in terms of manners a person can be he always uses the formal ways to his olders
