Welp, made this just now and it was awesome! The tweaks I did to make it LA-style were to include a seeded/minced serrano chile with the aromatics, served with lime wedges instead of black vinegar, and also fresh cilantro with the tops of the green onions. And the Taiwanese knife-cut noodles were a great recommendation, which I was able to find at H-Mart. This is going on the rotation!

Now I'm going to make this all the time. I added some dark soy sauce for color (just .5 tbsp), mirin instead of wine, a sliced green chili pepper for some extra spiciness, and I used pappardelle noodles. Yum.

I made this today and it was amazing!! I added crispy tofu instead of pork for a vegetarian twist! But here’s a warning… if you use common crushed red pepper, use WAY less than he uses. I didn’t realize how much spicier they are compared to Korean chili flakes. I used 1tbs and it was still reallllllllyyyy spicy. I would suggest going down to 1tsp of chili pepper for it to be more enjoyable.

The sugar gives a balance to the spicy, and the oyster sauce, and Gochugaru flakes gives it a unique “Asian” flavor that makes it stand out from your typical western chili noodles. I was so excited I forgot to give it a splash of black vinegar. Thanks, Aaron!

The first time i´ve tried this i wasn´t blown away BUT that might be because i used ginger (which i hate xD) and my garlic got burned . Now i gave it a second try and made it without the ginger and with a LOT of attention to the garlic (saddl only 5 gloves because that was everything i´ve had) . And i added a red chili pepper as well since it was in the fridge. Yup, it taste SO much better. really delicious and SO easy . And btw, i really love all the ingredients substitution, it´s a really rare thing for cooking videos , reall appreciate it :D

made this today, only swapping out bok choy for gailan! I think the chinkiang vinegar (or a similar acid) is necessary to round out the flavor, but it was good even with hoit

Knife cut Noodles needs more publicity! They are my favorite type of noodles. fettuccine close second. Try dandan noodles with it. It's amazing! Edit: the saucy dandan noods. Not the soup dandan noods

If I were using shrimp or other seafood, would you recommend that it gets cooked in the chili oil and then set aside before adding the noodles and recombining, to avoid getting rubbery, or do you think this all goes fast enough that it shouldn't matter?

Hi there, I’ve just made this dish and I guarantee this is… Absolutely delicious! I lacked one ingredient, and I had to make a substitution for rice wine (mirin), in any case we all loved the taste. 😋👍👍👍

Made this recipe and it was amazing, even with the substitutions I had to make in a pinch - hoisin for oyster sauce, garlic chili past for the Korean chili flakes, sherry cooking wine for the good stuff, Thai rice noodles for my fav flat wide rice noodles, and it was still crazy good! Thanks for this, will order the correct ingredients and make it once a week for the next year to master it. Thanks again!

Just tried this, and have to say its amazing. Added 2 fresh Thai chills in with the oil for a bit of extra kick but have to say it probably wasn't necessary. Smooth flavor's that combine well. Thank You !! I was thinking next time to maybe add some lime juice maybe even a touch of mint.

For Americans who only have regular grocery store red pepper flakes instead of gochugaru, be warned substituting 1 for 1 will turn out very spicy. Still delicious, but when I make next time I will use maybe half and I'm a fan of spicy food. I looked it up and the reason gochugaru is such a vibrant red is that they take out the seeds before grinding, making it significantly less spicy

Thanks. I want to try making this but I can handle spicy foods because I'm never sure if my indigestion will act up. I might look into getting some gochugaru since it doesn't have the seeds in them. Whenever I'd made anything with just a little bit of red pepper flakes, i almost always feel the heat right away.
