Is it “appropriate” to switch the dominant signing hand from right to left and vice versa when role-shifting? So I would sign left-dominant as Bill and right-dominant as Bee in the story….?

It is uncommon to shift hand dominancy in order to role shift. Instead just angle your torso a bit.
