Happy Valentine's day! Tonight I thought we could bake some Fastelavensboller (sweet cardamom buns with jam and dairy free whipped cream) together :)

🌷Recipe for Plant Based Fastelavensbolle (Sweet Cardamom rolls)🌷
INGREDIENTS:
♡ 2 Cups Plant milk (room temperature) I use Oat milk ~
♡ 1/2 Cup Vegan Butter (melted and room temperature)
♡ 1 Packet Active Dry Yeast
♡ 1/4 Cup Sugar
♡ 5 Cups Flour
♡ 2 tsp Cardamom
HOW TO:
Warm the plant milk on the stove or in the microwave until warm, but not too hot or it will kill the yeast. Think bath water temperature :)
Add the warm plant milk, vegan butter, sugar and the yeast. Give it a little stir with a spoon, and let sit for 5 minutes.
Add Flour, Cardamom and combine the ingredients.
Work the dough for 10 min. in a Food Processor or 15-20 min. by hand :)
Put the dough back into the bowl and cover it with a warm towel, and let rise in a warm place for 1 Hour. The dough should double in size.
Drizzle some flour on your working station, and divid the dough into 15 pieces, and make rolls. Put the rolls on a baking tray with a baking sheet. Brush the buns with a little plant milk before putting them in the centre of the preheated oven.
200 degrees Celsius (375 degrees F) for circa 12 min.
Let the finished rolls cool down a bit before adding your favourite dairy free whipped cream (I use schlagfix spray topping♡), jam and drizzle the top with powdered sugar :)

Oh! In Sweden these are called Semlor and we put mandelmassa(almond-cream ish) or vanilla instead of jam :) I prefer with vanilla but I think jam would be so tasty! We also have “semmeldagen” which was 13 feb so everyone eats them around this time of year :) do you have a special day for them?

We also call them fastlagsbullar, but "Semla" has taking over on the market. If you buy a classical fastlagsbulle in Sweden it is mandelmassa in it. But there are many variants.

I made these yesterday and they were delicious. Used almond flour with erythritol as the sweetener. Mine came out a lot moister than what yours looked like. Maybe I needed to cook them longer with the almond flour. Or maybe a blend of almond flour and coconut flour would dry them up some more for next time. No matter because with the raspberry jam and whipped cream they were absolutely delicious. Rather than a bun I cut them in half so they were a bit more like a large moist scone. Quite addictive eating. Thank you Veronica - these are a tempting Norwegian treat I can make from time to time.🧁🧁

LOVE YOUR CHANNEL. I haven't met many Norwegians in the States, but like you the few I encountered spoke English quite fluently. I've met far more German tourists and they're nowhere near as proficient. I guess it's just shocking because while West Germany was occupied by the U.S., Norway was preparing to fight off both NATO and WARSAW PACT invasions. You'd think the Germans would be better at it than you. Hope Norway kicks out all of the American businesses before I visit someday.
