Kate, I’m enjoying this so much! And hadn’t really considered the different American vs UK terminology when it comes to cider but you’re spot on. I’m American and we do associate apple cider with a spiced apple juice drink often served hot like this recipe and is more commonly a non-alcoholic or “virgin” drink. But you can certainly add alcohol in which case it becomes “spiked apple cider” which is a lovely warm winter treat. And then I believe what we call “hard cider” in the States is what you would simply call cider - a cold alcoholic bottled/canned beverage. I enjoy both 😊

Spiked has alcohol in it and virgin is non-alcoholic. For family gatherings one might make a large batch of the virgin mixture for all ages and then “spike” (add liquor) the ones for adults that want alcohol. Arugula is a leafy green with a mildly spicy/peppery flavor. It can be used instead of basil in recipes for a twist. Makes a nice salad with lemon vinaigrette. Compote is sweetened cooked fruit and its syrup - very near pie filling without crust.

Fun fact: The reason American recipes often specify salt (ie kosher) is that a lot of family's have "table salt" around as well, which will make for a VERY different outcome if used instead
