Those para ones aren’t done right, patacones are also controversial because they are Dominican too but you should first cut up plantain, fry it once, then take it out and smash with a cup or something similar and but then back into the oil until they are golden brown, that makes perfectly crispy and chewy patacones, hope you take the advice well
