My husband is from Korea and I have been there many times. Kimchi is one of many side dishes that is served when eating korean food. It wouldn’t have seemed so spicy if bites were eaten in between each dumpling, or bbq meat, or ramen. Or any food for that matter. It’s not meant to eat by itself. It’s great to cut through the heaviness and fat of the meat you eat with a little vinegar and spice.
