As a person born, raised and living in Switzerland, I can calm you down, I have not heard of a mojaority of those dishes either. The only two recepies I can approve is the Züri Gschnätzelts and the Rösti. Just out of interest, from which Kanton are you?

Swiss cheese is not just Emmentaler, there are a lot of other and waaaaaay better cheeses.
