All the sauces came out of a bag or a can. Not much "chefing" going on in the prep. Lots of manufactured products. I get it, they are a high volume place. But let's not call it hand made or chef level cooking when nearly everything comes out of a box or a can. Barring the dairy products, of course... butter, milk, cream...all the other sauces were just heated up products. The line cooks did a great job, though. Lots of great coordination, especially with the person on the fryer. Rice cook kept it up good, as well.

えびめし自体は渋谷道玄坂にあるカレーショップ「いんでいら」というお店のメニューでそこで修業された方が独立して岡山に持ち帰って広まったのがルーツになります。「いんでいら」は今も道玄坂で営業されてますし、他にも岡山出身者の方等がお店で出されているケースもあるので調べると岡山県外でも食べられる店はちょこちょこあると思います。

確か本社の敷地内のプレハブで限られた人達で作られてるとTVかYou Tubeで見たことがあります。社長すら作り方を知らないとか。

The chefs should explore the idea of making meatloaf, since that's how it's portioned. Easy to put into a baking pan instead of a plastic bin.
