When she said Stainless (pan) I believe that was carbon steel. Love fish tacos and tortillas are pretty easy too. (Also teaspoon or two of sugar, not Tablespoon).

Tilapia and halibut are two fish on the opposite side of the spectrum. Halibut is wild caught and is super expensive and I'm from the coast of BC. Tilapia you couldn't pay me to eat, it's all farmed.
