I am new to making cakes, but I’m slowly learning and having a blast. I’ve been working with only frosting whether it be Swiss meringue or American buttercream frosting. I really want to learn fondant. Unfortunately, a lot of the people I know don’t care for eating it. I think there are so many creative cakes I could make with fondant. So I’m going to ignore everyone and try it. I do have a question though. Is there a way that you know to figure out how many servings a cake like you created would serve? This would really help me out. Lastly, your cake looked absolutely amazing. I fell in love with each tier as you created them, and I now want to try them all. I've watched a few of your videos. I really like your work but I can't find what fondant you use. It seems to be just the right consistency and dries nicely. I've used Fondex and another one that's escaping my memory for the moment but it's very soft and doesn't dry out (VERY tasty, though). I never seem to have the exact same results you do and I'm wondering if I'm rolling out my fondant too thin or if I am using the wrong kind of fondant. Those ruffles are gorgeous.
