Picking pattern: A - G - D - B - A - B - A, and repeat. Took me a bit to get at first haha. Thanks for the video, been looking all over youtube for this tutorial!

Would that be still 6/8 timing as there are then 7 beats?

You mean strings? I think it alternates between A - G - D - B - A - G and E - G - D - B - E - G with low E and occasionally goes to D - B - G - E - D - B with high E (during the Dm and Fmaj7) that's how I get the full feel. Gets a little complicated to draw out and remember, but it's the bare minimum you need to do if you're serious about it.

In the video I was talking about how difficult it is to play the 6/8 measure while singing the refrain in 4/4 measure. Recently Aurora did a live stream on tiktok where she played that herself on the piano and showed that it is possible! Be sure to have a look at if if you haven't already.
