While I don’t do any canning, this video makes me think of one of my older sisters who did a lot of canning,made pickles, and jams and jellies.She passed away a few years ago and I miss her so much.She was a kind, sweet girl, just like you.❤️

My sister and I canned 500 pounds of tomatoes. Sauce, salsa, juice and chopped. Just got another 100 pounds for more chopped and stewed. Will feed 10 people For the next year. This is only our second year.

We also dehydrated about 20 pounds of skins and leftover parts. Pulsed them in a food processor for tomatoe powder. Use to add extra flavor or make paste.

Hello, Tessie! As others have said, this brought back so many memories. I remember my Mom running her finger around the rim of the glass canning jars to check for chips just the way you did. Most women who canned back then didn't entirely trust their eyes to find flaws in their jar rims. So they used their hands as well. I know I've mentioned it before, but Mom inevitably said that peak tomato canning season always fell on the very hottest days of August. And like everyone else in our rural area, we did not have air conditioning. So the humming sound of the big fan and the smell of cooking tomatoes was a major part of late summer. (Toss in the sight of lightning bugs, the sound of cicadas and the aroma of cut crops and there you have a classic rural summer. I feel sorry for anyone who hasn't experienced it.) Your Gramma Fannie was a wonderful woman. I loved the way you referred to yourself as "a young married woman of 17." That's exactly what you were, Tessie!. "Woman" was the operative word. You had a husband and three children at age 19, and you rose to the challenge of caring for your household. No wonder you have so much courage and perseverance today! You got an early start. Back in Gramma Fannie's youth, I imagine that being a husband or a wife while you were still in your teens was not uncommon in the Amish/Mennonite tradition. And these young couples got support from the community, but I have a feeling they didn't expect other people to plow their fields or raise their children while they went out to "find themselves" by having lots of fun or hanging out at mom and dad's house. It sure is a different world today! Thanks so much for preserving the very best of these traditions and passing them on in the 21st century. 😀

Hi Tessie, that is exactly how my Mother used to can tomatoes. Some of my best memories are hearing that "jingling" metal thing on top of the canner and at the peak of canning season it would be jingling and hissing all day! Those are some great memories of late summer for me.

That’s the blessing in watching a video through to the end. One little sentence: “I also change the cloth that they’re sitting on each week.” Such a simple but good tip, I want my stuff to last as long as possible and hadn’t thought of that!

Was watching a KZbin channel the other day. If you don't like tomato skins in your products. With the skins you remove to dehydrate them. When dry ground them to a powder to use in soups or other dishes

YEP !!! Watching my grandma and mother now aids me in canning...(for the last 50 years of my 64ish years).... Mother put up 100 jars of green beans for us every year for all my growing up years... I LOVE TO CAN ! LOVE YOU SIS ! 💖😁😀

Loved this video. My grandmother was a farmers wife who canned all of their food. I never had the honor of learning from her as I lost her when I was 14. I love canning and really enjoyed your video.

Your Grandma Fanny was such a blessing in your life. She taught you many wonderful skills and now you are passing on those same skills for anyone to learn. Food that you have grown at your home and then putting them up for later is such a good feeling. Tastes so much better than the store produce. I have started putting up corn and there is something so rewarding and gratifying about it all.

I am 50 and I remember helping my Grannies can tomatoes and peaches and pole beans and anything else that came out of that garden. Lol. I miss her so much. We didn't measure anything either. I live in Alabama and it is always a dash and a pinch or a smidgen. Lol. I love your videos!

I have jars from both of my Grandmas 💗 I don't use them except for dry storage or fridge storage. I have so many and am setting aside as a last resort if all of my other jars get full

Tomorrow I will be teaching a friend how to can tomatoes and tomato sauce. She has never canned anything. It should be interesting.

I learned to can from my mother. I vividly remember being in her steamy kitchen with the tomatoes fresh from the garden! We too boiled the tomatoes to loosen the skins, but would put directly into an ice water bath to cool them. We didn't add seasonings at the time of canning but did mash them up with a potato masher before water bathing them. All seasonings were added at the time they were used, but sugar and salt were always part of them. My Dad would make tomato juice that was flavored to taste like V8. I was his official taste tester and I would tell him what it needed more of until we agreed it was perfect. It made me feel so special and also got me to drink more of the juice as I was the fussiest eater of his 4 kids. Thanks for bringing back these wonderful memories of my Dad and Mom Tessie. They have both been gone for many years and I haven't canned in quite a while, but the skills are ingrained along with the memories.

Thank you so much for this video! Perfect timing as I had canned 3 quarts of tomato sauce on Saturday. i had added the lemon juice but was sure it wasn't the right amount for the jar size. You answered my question and I feel quite confident now. I have learned so much from your videos in such a short time and I truly appreciate all of the work you put into them!

we always added lemon juice but we never put sugar in our canned tomatoes until we opened them to use them... and if you put the lemon juice in the bottom of the jar and then add the tomatoes they are less likely to separate

Like your grandma, I mixed the ingredients with different spices. I put Mexican spices in some, Italian in others, and just salt in others. Then no matter what you're cooking you've got a good head start.

Years ago I water bath canned and we never got sick.I purchased a new one and have been hesitant to use for my tomatoes but you put my worries to rest. Well Tessie, guess what I just finished doing? The exact same thing...lemon juice and coarse salt and all. My tomatoes are coming in now but have to can a few jars every few days so they don't get over ripe. Some jars of salsa will be next. Tomorrow will be zucchini fritters to use up some of my harvest. Glad to see this video. We canned tomatoes earlier and followed the same process. I am wanting to can some potatoes and I know you already did a video on canning the potatoes, but I can't seem to find it. I remember you added something or did something to keep your potatoes white and I thought oh, I will remember that. Of course, I cannot remember what it was. Hi Tessie! I canned ALL weekend!! 13 jars of sauce, 12 jars green beans, 13 jars of corn!!! I was so tired but its worth it!!! I was able to get everything so cheap from a local farm! Your jars look great!

did you know that tomato plants and grass only put out a smell to defend themselves. i hate the smell of a tomato plant i do like fresh mowed grass smell. and the air after it rains.

Good morning, Tessie! What form of vitamin C did your grandmother add to the tomatoes? Did she just drop a vitamn C pill into the jar? (Sorry, I'm completely ignorant of these things. Just trying to learn.) Thank you!

She would get a vitamin C the chewable dissolvable ones that she would put it on the bottom of each jar now you can do the same thing with just adding a teaspoon of vinegar or lemon juice
