For those who dont cook with alcohol, apple juice is good substitute for chinese rice wine. Its does the same. Although Chinese rice wine is used in many dishes you cant tell the difference to be honest. Especially when there are a lot of strong flavours involved.

Hi Aaron. I love watching you cook and am anxious to try some of the simple dishes. Here in the US, some 'Chinese' buffet's serve peanut butter chicken. The sauce is like a creamy peanut butter served with slices of fried chicken. I want to replicate the sauce. Can you help? Many Blessings!

I would like to point out that asian seasame seed pasted is made with toasted seasame seeds while tahini is normally it is made with raw hulled sesame seeds and there is a large flavour difference. My local thai market has canned Pigeon Fermented Mustard Green 140g and they are pretty good, but we preffer Leng Heng Seasoning Pickled Green Mustard with chilli, NOT from amazon uk they cost X3 the price of elsewhere online.

My Dan Dan takes 2+ hours to make. You’re so fast! I don’t think you’re making it like I am Aaron. Of course, wine drinking is part of my cooking time. I’ve rewritten all of my recipes to include it. LOL JK, I’ve been making this for 30+ years. Mine may not be authentic but I found it in the Seattle Times newspaper all those years ago! One of my favorite dishes!

Aaron, you are not supposed to use the little black seeds that come with the Sichuan peppercorns. They are bitter. The outer reddish wrappers are what you use. This recipe looks great! I will try it.

I've only tried to make dandan noodles in places where some proper ingredients were scarce, so there was definitely some finding good substitutes involved. But it always came out pretty close. There's actually two kinds of dandan noodles, this Szechuan version (which is my favorite) and the Hong Kong version which is more like a soup, really (not my favorite, the balance is way out of whack and the broth washes out the creamy sauce).
