A quick correction regarding the instance storage. If you restart the instance, the data will be there even after the restart, the data is lost if : the disk fails the instance stops/ hibernates or it was terminated. Beside this, very useful video, thank you for the effort!

No, EBS is a persistent disk in which data is retained irrespective of instance state. However there is another type of block volume i.e instance store volume which you can attach to the instance. This disk comes free along with the instance price and its optional to use. If you stop the instance then this instance store volume data is wiped out (lost). Not all instances support instance store volume. Look at ec2 instance types detail page for instances which provides instance store volumes.

Instance store is local to the instance and comes with few specific instance types only. The data in instance store is wiped if you stop the instance. So its best used for temporary (/tmp) filesystem. Benefit is that it comes free with EC2. EBS is external disk and data is persisted irrespective of EC2 instance running status. You pay for EBS size.
