Put big metal bowl in deep fridge 5 yolks and 125g of sugar in a bowl over a pot of water Whisk and cook its till white and thick (8 mins) - don’t over thicken. Then replace the hot water with cold water. Put the bowl over the cold water to cool. Careful the glass doesn’t break with rapid temp change. Let it cool Big metal bowl from deep fridge. Around 360g of double cream Whist till SOFT peaks. Don’t over whisk (3mins) With the cooled yolks mix, 250g+bit less than 175g (425g) of mascarpone cheese Fold! Then whisk (gets thicker here hence don’t make the yolk too thick to begin with) Mix cream and eggs bit by bit. Hand whisk and spatula helps 1/2cup warm water and 1tbsp of instant coffee…
