10:00 Hi Elmo, your Cabramatta experience brought me many sweet memories but yet sadness. In the 80’s, I visited my old buddy who has settled in Sydney and he took me to this beef pho restaurant in Cabramatta. In the cold winter, my goodness, that piping hot pho and beef slices were heavenly and nothing ever came close since. My buddy’s wife is a Vietnamese who arrived in Australia as a young girl with her family, the boat people escaping the Vietnam War, thanks to USA. Cabramatta was a rough neighbourhood ruled by Asian gangs. Thinking back, me & my best buddy in the pho restaurant that was warm and cosy with delicious food but outside, it was bitterly cold and intimidating. Cabramatta is safer nowadays but the war in Ukraine and reference to Cabramatta brought bittersweet memories to me. Thank you for another video.

I still could not get the beef noodle similar to that I had from my hometown during my teenage years. There was a vendor in my hometown which sells beef noodle but with the beefy taste which I like very much. The store would have items like beef balls, beef meat, stomach, liver, tendons, tripes, intestine, etc all boiled in a clear, lightly flavoured soup. Unlike those herbal version which tried to mask the beefy taste. Imagine trying to eat beef but disliking the beefy taste. Might as well not eat beef. The chilli paste is made from just grinded dried chillies with soy sauce. One can order either the yellow noodle or beehoon with the beef selection. No dried version. The taste is simple but fantastic with just lightly scented with fried chopped garlic and green onions. I still could not find an equivalent taste anywhere. The vendor has passed away and the son took over the store but did not do well due to inconsistency. So the beef noodle store disappeared. Now I can hardly find beef intestine or liver anywhere.
