To answer your question about English being weird Reason for these seemingly “irregular” plural forms is historical - ・Forming plurals in Old English meant a change in vowel sound (eg goose / geese; mouse / mice as you mentioned. This is still found in Modern German today too eg Haus / Häuse) ・Another way during that time to form plurals was to add “en” (eg child /children; ox / oxen) ・However as English became heavily influenced by French after 11th century, English dropped the old plural formation of vowel change or -en inflections above and simply added -s as French did and still does to this day. ・The “irregular” examples you gave are simply relics left over from an older plural inflection system in Old English ;)
