🟢食材:
豬手 4 隻(已斬件)
薑、蔥、蒜頭、紅辣椒、泡椒適量
月桂葉 2 片
桂皮 1 小塊
八角 1 顆
花椒少許
白醋 300 毫升
白冰糖 150 克
紹興酒2湯匙
鹽 1 茶匙
水 1.5 公升
🟢做法:
1️⃣ 煮一個糖醋水:將 1.5 公升水和 150 克白冰糖一起煮溶。煮滾後加入 1 茶匙鹽,然後關火。加入 300 毫升白醋,放涼備用。可以試一下味,如果不夠酸可以再加一點醋。
2️⃣ 豬手加薑、蔥和紹興酒汆水 5 分鐘,洗淨拔毛。
3️⃣ 另外燒一鍋水,水滾後放入豬手,水要浸過豬手,加入薑、蔥、桂皮、月桂葉、八角、少許花椒、1 茶匙鹽和1湯匙紹興酒,煮滾後轉小火煮 40 分鐘。試一下豬手的腍度,腍度可以便撈出,不要煮太腍。
4️⃣ 豬手撈出放入冰水裡浸泡 10 分鐘,可把豬手骨起出來,用涼開水把豬手肉的膠質洗走令豬手吃起來清爽。
5️⃣ 去骨的豬手肉放入薑片、蒜片、紅辣椒和泡椒,可以加少許泡椒水,加入放涼的糖醋水,糖醋水最好沒過豬手,放入冰箱浸泡 6 小時或過夜。
🟢Ingredients:
Pork trotters - 4 pieces (chopped)
Ginger, spring onions, garlic, red chili peppers, pickled chili peppers - as needed
Bay leaves - 2 pieces
Cinnamon - 1 small piece
Star anise - 1 piece
Sichuan peppercorns - a pinch
White vinegar - 300ml
White rock sugar - 150g
Shaoxing wine - 2 tbsp
Salt - 1 tsp
Water - 1.5L
Cooking Directions:
1️⃣ Make the sweet and sour sauce: Boil 1.5L of water with 150g of white rock sugar until the sugar dissolves. Add 1 tsp of salt after boiling and turn off the heat. Add 300ml of white vinegar and let it cool. Taste the sauce, and if it's not sour enough, add a little more vinegar.
2️⃣ Blanch the pig trotters with ginger, spring onions, and Shaoxing wine for 5 minutes. Rinse and remove any hair.
3️⃣ Boil another pot of water, then add the pig trotters. The water should cover the pig trotters. Add ginger, spring onions, cinnamon, bay leaves, star anise, some Sichuan peppercorns, 1 tsp of salt, and 1 tbsp of Shaoxing wine. After boiling, turn down the heat and simmer for 40 minutes. Check the texture of the pig trotters, and once they are tender, remove them from the pot. Don't cook it too tender.
4️⃣ Put the pig trotters into ice water and soak for 10 minutes. Remove the bones from the pig trotters and wash off any gelatinous substance with cold boiled water to make the pig trotters more refreshing.
5️⃣ Put the boneless pig trotters with ginger slices, garlic slices, red chili peppers, and pickled chili peppers. Add some pickled chili peppers water, then pour in the cooled sweet and sour sauce. The sauce should not cover the pig trotters completely. Put them in the refrigerator and soak for 6 hours or overnight.
