why did you only use the highest grit stone to sharpen the back of the yanagiba?

If you use low/mid grit stones on the back, or ura, it will wear out and the urasuki will disappear very fast. The urasuki is the hollow ground into the back of a yanagiba. It is probably the most important part of a yanagi and takes a lot of skill to grind well. For me, I only use my 8000 grit and fine natural stones on the back.

Cause thats where is the core steel (Hagane)... You want to preserve that and only use high grit stone to remove the burr ones , likewise that side of the blade is concaved and if grind that out and cant repair it (unless you have large grinding wheel and skill) Those are just basic concepts and this rabbit hole goes way deeper which i wont adress🙏
